The 7200VXR supports 15.x but at this time doesnt have a Universal Image, its a specific image for each feature-set.

The latest release of Advanced Enterprise 15.2 is currently c7200-adventerprisek9-mz.152-4.S.bin.

The 15.2 train for 7200 in GNS3 is quite stable, I have VMs that have been running for weeks.

I doubt you are using any features or commands that are drastically different between 12 and 15 anyway.

EDIT: Also, from the GNS3 FAQ: Is IOS version 15.0 supported.

Please also note Cisco stated that only IOS 15.n(n)M releases will be supported on Cisco 7200 series routers.
